Most great steaks arrive with their story already told: the farm, the cut, the age, the price. Aragawa: Senses takes all of that away. Three steaks and three wines are set before you with nothing but a letter and a number, and the only thing left to go on is what you taste.

It is a blind steak and wine tasting in Mayfair, and it is less a test than a discovery. There are no right answers to find, only preferences to uncover, some of which may surprise you.

What Is Aragawa: Senses?

Senses is an exclusive sensory tasting experience at Aragawa, 38 Clarges Street, inviting guests to experience exceptional steak and wine without preconception. It launches in October and is priced at £700 per person.

How the Blind Tasting Works

Taste

Each steak is grilled the Aragawa way, over Binchotan oak charcoal in our traditional kiln and seasoned simply with salt and pepper. Nothing else stands between you and the beef.

Compare and record

Guests taste, compare and record their impressions as they go. Texture, richness, how the fat melts, how each wine changes the steak beside it: the notes are yours to keep.

Choose, then discover

Before anything is revealed, you choose your favourites. Only then are the cuts, provenance, producers and vintages uncovered, and you learn what your senses were drawn to.

Why Taste Tajima Wagyu Blind?

Tajima beef holds a revered status as one of the most sought-after varieties of Wagyu. Hailing from Hyogo, it is known for exceptional marbling, buttery texture and depth of flavour. Yet Tajima is not a single taste. Farm, cut and age each leave their mark.

Aragawa's current à la carte menu shows how wide that range can be, with Tajima wagyu from three farms:

  • Okazaki Farm: sirloin, tenderloin and chateaubriand, 46 months
  • Tamada Farm: rump, 32 months
  • Nishizawa Farm: sirloin, 40 months

Tasting blind removes the labels and leaves only the differences. It is the most direct way to understand what you prefer, and why.
